Beef Shanks with Wild Rice and Barley
This week we worked with beef shanks, a cross- cut section of the leg raditionally prepared as osso bucco. Shank in a grass-fed, free-range animal has good strong flavor but these supporting muscles will be tough unless braised – i.e. cooked in liquid to break down the connective tissue.
